Many people think: How is this possible? How can I do it? How does Peggy do it? My answer is that it’s all about where you shop, when you shop and how prepare. One of the reasons why my meals are far under $10 is because of portion control. I use smaller portions, but more than enough food to be a worthy meal. This way it’s economical, healthier and much more fun to enjoy. An example is a large tuna steak, sliced in two and served with two veggies and pasta, quinoa or brown rice. It’s an meal and so much better for your digestion!
One of the other reasons why I can cook on this budget is because of the where i do mu shopping. Since I always try to buy all organic ingredients, which are much more expensive, I like to go early and check out the sale items. You will be surprised what and how much great meats and fish products are on sale. I go and select what I need for one or two days to the max, and always check the expiration date. When you buy from the fresh department, never buy more then need. Shop around and find out what is in season. In the summer lobsters are $8 and precooked, a dream for any NYC girl who wants to stay in her budget and keep her 10 minutes! So shop around and find all the seasonal products you can get for a reasonable price. Now, remember, I am not telling you to live on sales products, just be aware that you have that option and make shopping an adventure.
The reason why I can cook these meals in less then 10 min is because of strategic planning. So think about your dish, what would you like to prepare and plan for it. Chicken and white meats take more time to cook, but if you slice the meats very thin, it cooks much faster. Another thing I like to do is prep and lay out my ingredients in my rack, Peggy’s ingredients rack, so it’s easy to focus on the pots and pans on the stove, even if it’s a multi task meal.
Cooking you a meal should never be a drama; it should be fun, challenging and an elegant adventure every time you cook! I love to make a great presentation on the plate so that my dish really looks like a gourmet dish.
